Sauteed Chicken with Arugula
  • 600gr of boneless and skinless chicken
  • 1 onion
  • 1 lemon
  • 1 bunch of fresh basil
  • 100gr of arugula
  • Extra virgin olive oil
  • Salt
  1. Cut the onion (peeled) in cubes, and also the chicken into slightly bigger cubes. Stir fry everything together until browned.
  2. Then add lemon juice and the chopped basil. Cook over low heat until the lemon starts to evaporate and the chickens begins to brown.
  3. At the end, add the arugula, remove and serve hot.
